We begin with thick, marbled pork belly from free-range organic pigs at Lửa Little Farm. After a careful rub of salt and herbs, it’s left to cure slowly for 6 months. This slow process draws out deep herbal notes and a hint of nuttiness. The fat melts softly on the tongue, while the meat stays firm and full of savory depth.
