This sausage is made from free-range pork raised at Lửa Little Farm, using a balanced mix of lean and fat cuts, coarsely ground for a springy texture. We season the meat with natural herbs and spices, then slowly smoke it over natural wood.
The result is a sausage that’s juicy and springy, with bold savory notes and a smoky finish – delicious grilled, in a sandwich, or or served with cheese and pickles on the side.
