Aromatico is a pet-nat made with 100% grapes from Yamagata Prefecture.
It is based on Delaware and Niagara varieties, skin-fermented for 8 days, then blended with Delaware that was skin-contacted for 12 hours. Before bottling, fresh Delaware juice is added to adjust the sugar content, allowing fermentation to continue naturally in the bottle. No antioxidants are added.
The aroma evokes the fruity character of table grapes, with notes of ripe pineapple and mandarin orange candy. On the palate, creamy carbonation spreads smoothly, delivering a fruity and fresh impression. The natural sweet-sour balance of the grapes shines through, and the finish is clean and refreshing, thanks to the gentle effervescence.
