Momento Mori Staring At The Sun, Victoria, Australia

This is a blend of Vermentino, Fiano, and Moscato Giallo, each fermented separately in stainless steel with 3 months of skin contact. After fermentation, the wines are pressed and returned to stainless steel to rest on their solid lees over winter. The final blend is assembled and bottled in early summer following a gentle gravity racking.

Delicate yet complex, the wine offers subtle notes of musk, orange blossom, orange peel, and ginger spice, all wrapped in a savoury, textural grip.
